Deleting maps from the iPhone app is simple and does not require you to delete the whole app.

Simply view the map list (folder button on main toolbar).

Tap the blue "details" button on the right to view the map details (HINT : this view also shows you the size of the map cached on your iPhone to let you monitor drive space)

Tap the Delete button on the screen to delete the map. The app will ask for confirmation.
